To ride a mount in Spelunky 2, like the turkey that first appears in World 1, you must tame it.

Taming a mount is a simple matter of jumping on it and letting it run around until it calms down. You’ll know this has worked when several hearts appear above the mount, your character’s arms stop flailing, and the mount stops moving.
